Have you always wanted to be a chef?
When I was little, I wanted to be an interior designer, but I have always loved cooking. Many of her childhood memories are of spending time with her mother and grandmother in the kitchen. I remember sitting at the kitchen counter in the morning making chocolate chip cookies and pancakes with her mother.
Do you remember the first thing you cooked?
Funny thing was I was talking about the first recipe I created. It was a type of beef pasta dish called beef confetti.
What is your favorite food to use while cooking?
Plant-based foods are so much fun to work with because of their bright colors. When creating a catering menu, it’s fun to combine different ingredients to make their colors pop.
I grew up knowing nothing about plant-based diets and cooking. After that, I became familiar with things I didn’t know until 10 years ago, such as cashew cream and nutritional yeast. It was fun for me to try and figure out how to enhance and create these simple swaps and ingredients that enhance the overall nutrition of the plate without sacrificing flavor.

What do you like to do in your free time?
The best thing about being an entrepreneur is that it gives you a certain kind of flexibility to control your schedule while working harder than ever in your life. When I’m not cooking or working, I have a friend who goes for a walk with me every Saturday morning. I take that time to decompress, reset, relax, and quiet my mind. My boyfriend and I love to travel and explore new places, and since my family lives in Orlando, we spend a lot of time with them.
Speaking of travel, do you have a dream vacation?
One of my dream vacations is to go truffle hunting. You can do this in Oregon and Italy. There are many other things, but it seems to be fun again. I love truffles, so if you come to my house for dinner, chances are that truffle oil is on to something.

Tell us about Fit Living Eats by Carly Paige.
We offer a customized concierge private meal preparation service where we prepare meals for each of our guests as if we were their private chef. We also offer boutique catering services, so we do a lot of baby and bridal showers and private dinner parties. His third component of the service includes private events and classes. A corporate team or a group of friends get together to do something a little different, cook with different recipes, enjoy a meal at the end of class while socializing with each other and with me. is a fun way.
Where do you see yourself in 5 years?
We want to broaden what we currently offer to private chef clients, standardize those options a bit more, and reach even more people in the larger Orlando community. I want to put myself in a space that I can call home. The biggest advantage of being an entrepreneur is that the world is your oyster. You can create your own path to success.
